Salted Caramel Affogato
Camellia sinensis var. caramelum salinum
Espresso pulled over a salt-cured caramel scoop. The lab's most-ordered weekend specimen.
Seven matcha lattes. Six gelato specimens, half of them green. The Bay's first matcha lab to fuse Dubai chocolate with stone-milled ceremonial. For everyone who can't explain their matcha addiction — and isn't trying to.
Matcha Mori opened softly on May 20, 2026, in a corner shop on San Antonio Road. We are not a tea ceremony. We are not a milk-tea chain. We are an in-house gelato kitchen built around a single ingredient — and a stubborn belief that flavor research is worth doing in public.
What we serve is what we tested last week, what we argued about last month, and what we will keep in rotation only if it earns its keep on the counter.
Each batch is named, tasted, logged, and either re-pinned or quietly removed. The current rotation, in order of how often we are asked to make more.
Camellia sinensis var. caramelum salinum
Espresso pulled over a salt-cured caramel scoop. The lab's most-ordered weekend specimen.
Oryza sativa infusum lacteum
Toasted milk-rice churned cold. Sweet, soft, faintly cereal. A quiet favorite.
Camellia sinensis jasminum
Ceremonial-grade folded into a jasmine cold infusion. Floral first, bitter last.
Camellia sinensis var. ceremoniae
House ceremonial-grade. Single ingredient, single intention. The control sample.
Camellia × caseum salinum
Spiced black-tea base capped with whipped salted cream cheese. A two-flavor stack.
Oryza sativa lac
A dairy-free base for the quieter palate. House recommendation for first-time guests.
Cracked chocolate shell, kataifi crunch, pistachio butter folded into matcha gelato. Held together by a hand-piped cone.
A double-pistachio specimen. Toasted pistachio gelato over a kataifi-honey base. No chocolate. Sharper finish.
A cold coconut-cream float with a single scoop of ceremonial matcha. The lab's lighter answer to the Dubai stack.
All lattes are pulled with our house ceremonial-grade matcha, whisked, never powdered into the cup. Iced or hot. Pricing finalized at the counter.

A botanical matcha lab opened in Mountain View — and they put Dubai chocolate on the cone.
Matcha Mori's jasmine gelato is the kind of thing you taste once and try to recreate at home for a year.
Six gelato specimens in rotation. I came back the next day for a second flight. No regrets.
The salted cheese on the Thai tea gelato should not work. It works. I do not have notes.
First time in the Bay I have seen a matcha lab take Dubai chocolate seriously. Worth the drive.
Grand opening counter ran the Dubai cone for forty minutes before the first lull. We will be ready next time.
